Rated 93 Drink NOW Even better than the Hors d’Age 6 Ans and showing a darker color and more depth, Sweet spice, toasted almond, cigar and crème caramel notes all come together beautifully, and this silky, elegant Rivesaltes is perfectly balanced, layered and seamless. It’s another terrific Rivesaltes to drink with toasted nuts or appetizers at the start of a meal, or to pair with a fruit tart or savory dessert. Vinification: Settling of the juice before fermentation. Pressed and then fermented under controlled temperatures (below 20°). Then the fermentation is stopped by the addition of pure wine alcohol (mutage). Breeding: Aged in oak barrels. During this period a certain volume evaporates and this is know as ‘The Angels Share’. Barrels of over 20 years old can sometimes be only half full.
